Family Dinner. Recipe: Zapallitos Rellenos.

  • Zapallitos
  • Onion
  • Garlic
  • Carrot
  • Celery
  • pumpkin
  • Zapallito
  • Dried rosemary
  • Cheese
  • Egg
  • White rice or minced meat
  • Olive oil
  • Salt and pepper

Instructions

We cut the zucchini in half and with a spoon we remove the seeds and the pulp. We boil them until they are tender with water and salt.

Once they are tender we take them out and place them on a plate. We put some pieces of cheese, one that we like, salt and pepper.

We heat the olive oil in a pot and then sauté the garlic, onion, carrot, pumpkin and zucchini, the green part, not the pulp because it is very watery. You can use the vegetables you like in the combinations you like.

In an option only with vegetables we add white rice already cooked. If we want a meat option instead of rice we add minced meat.

Finally we add a little salt, pepper, grated cheese and an egg so that it is more full-bodied.

We place the zucchini on the baking pan with a little oil at the bottom and fill them. We put grated cheese for grilling on top and take them to the oven. Ready! Serve immediately.
